I found this in a church cookbook. I cook it from memory. It is a South Carolina regional recipe from the low county area of our state. It is one of those dishes passed down through the generations.
- 6 slices bacon, chopped
- 1 lb okra, sliced
- 1 1⁄2 cups dry long grain rice
- 1 1⁄4 cups water
- salt and pepper
- Fry bacon until half cooked. Add okra and cook five minutes. Stir in rice, water, and salt and pepper. Pour mixture in a rice steamer. cook 1 to 1 1/2 hours or until the rice just starts to dry.
