Oatmeal Peanut Butter Cookies

  • Preheat oven to 350.
  • In a large bowl, cream togther Crisco, margarine, brown sugar, granulated sugar, and peanut butter until smooth. Beat in eggs one at a time until well blended. Combine flour, baking soda, and salt. Stir into creamed mixture. Mix in oats until just combined. Drop by teaspoonfuls onto ungreased baking sheets, 2inches apart.
  • Bake for 10 to 15 minutes or until just ligh brown. Don't over bake. Cool and store in airtight container.

  1. These were wonderful! I used crunchy peanut butter because that's all I had and we really enjoyed them. I also used the not-quick oats because that's all I had, and they worked out fine as well. These are really really easy to overbake, so I'm glad that you put that in your method of prep! I think between my husband and I we had about half the batch finished before they had time to cool!! Thanks for sharing!

I live in northern Illinois. I work as a Medical Transcriptionist, am also a church organist. I love to cook and bake, knit and sew.
