ingredients
- 1⁄4 cup Splenda granular
- 2 tablespoons brown sugar (not packed)
- 2 tablespoons pumpkin puree
- 2 tablespoons light butter or 2 tablespoons margarine
- 2 tablespoons liquid egg substitute
- 1⁄4 teaspoon vanilla
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon baking soda
- 1⁄3 cup whole wheat pastry flour
- 1⁄2 cup oats (not instant)

Optional additions
- 2 tablespoons dried sweetened cranberries
- 1 tablespoon chocolate chips
- 2 tablespoons flaked coconut
- 2 tablespoons raisins
directions
- Preheat oven to 375 F.
- Combine splenda, brown sugar, pumpkin and butter, egg substitute and vanilla until thoroughly mixed.
- Add in all the dry ingredients, except oats and "add in's".
- Use a small melon scoop to place cookies about 1 inch apart on a greased cookie sheet.
- Gently press down on the cookies with a fork.
- Bake in the oven for 10-12 minutes.

I'm not giving this any stars since I changed the recipe. I started out as normal, but I had to use an egg instead of egg substitute. 1/3c flour made soup pretty much, so I added more WW flour and white flour. About a cup more. Anyway, I love the pumpkin flavor in the cookies that came out. I am going to adjust this recipe for our needs because I do love the flavor it gave. Thank you!
