  • Preheat oven to 375 F.
  • Combine splenda, brown sugar, pumpkin and butter, egg substitute and vanilla until thoroughly mixed.
  • Add in all the dry ingredients, except oats and "add in's".
  • Use a small melon scoop to place cookies about 1 inch apart on a greased cookie sheet.
  • Gently press down on the cookies with a fork.
  • Bake in the oven for 10-12 minutes.

  1. I'm not giving this any stars since I changed the recipe. I started out as normal, but I had to use an egg instead of egg substitute. 1/3c flour made soup pretty much, so I added more WW flour and white flour. About a cup more. Anyway, I love the pumpkin flavor in the cookies that came out. I am going to adjust this recipe for our needs because I do love the flavor it gave. Thank you!
