ingredients
- 1 cup caster sugar
- 1⁄2 cup milk
- 125 g softened butter
- 1 pinch salt
- 2 eggs
- 1 1⁄2 cups self raising flour
- 1 large orange, rind of
directions
- Put sugar and milk into bowl and leave for 30 minutes.
- Add remaining ingredients and beat for 6 minutes on high speed.
- Cook in a well greased 20cm cake tin in a moderate oven (180-200 degrees C) for 60minutes.
- Variation: sub 1 teaspoon vanilla for orange rind.

I live in rural north New South Wales, Australia on a farm with my DH and our children - one is 16(he's my step-son) and our boy is nearly 2. Hopefully we'll be adding to that number later in the year.
We both have town jobs, so we don't get alot of time for the farm, but my DH keeps it going as best he can. We run boer goats and murray grey x santa gertrudis cattle. We also keep a few different breeds of chooks which give us lovely fresh eggs for my cooking!
I love to experiment and cook in the crockpot - a must for working families - and I love looking at the numerous recipes on here for the crockpot. I also like to do a bit of baking, but my poor old oven is nearly ready to be put out to pasture, so I can't really cook alot of the things I'd like too! One day I'll convince DH that it's time for a new kitchen and I'll get myself a schmiko oven.... ahh, that 'one day' is going to be good!!
