  • In a medium saucepan, combine 2 cups of the blueberries with the sugars, flour, butter, lemon juice spices and salt.
  • Cook over low heat until the mixture comes to a boil.
  • Reduce heat and simmer five minutes, stirring constantly.
  • Stir in the remaining blueberries.
  • Turn into the pie shell.
  • Chill thoroughly.
  • Serve with whipped cream.

  1. This is a delicious variation on blueberry pie; I chose it because the spices were unlike any other recipe I came across. I'm not adding stars to this review because mine never set up and we had to eat it as blueberry pie parfaits but I think that was caused by my using frozen berries, though I did add extra flour (but I think not enough). I will try again with fresh berries when they are in season and re-review with stars. Served with Cool Whip instead of whipped cream (layered to make parfaits). Thanks for the recipe!
