ingredients
- 4 cups fresh blueberries
- 1⁄2 cup granulated sugar
- 1⁄2 cup light brown sugar
- 2 1⁄2 tablespoons flour
- 1 tablespoon butter
- 1 tablespoon lemon juice
- 1⁄4 teaspoon allspice
- 1⁄4 teaspoon cinnamon
- 1⁄8 teaspoon nutmeg
- 1⁄4 teaspoon salt
- 1 pie shell, baked
- 1 cup whipping cream (whipped with vanilla and sugar)
- 1⁄2 teaspoon vanilla
- sugar, to taste
directions
- In a medium saucepan, combine 2 cups of the blueberries with the sugars, flour, butter, lemon juice spices and salt.
- Cook over low heat until the mixture comes to a boil.
- Reduce heat and simmer five minutes, stirring constantly.
- Stir in the remaining blueberries.
- Turn into the pie shell.
- Chill thoroughly.
- Serve with whipped cream.

This is a delicious variation on blueberry pie; I chose it because the spices were unlike any other recipe I came across. I'm not adding stars to this review because mine never set up and we had to eat it as blueberry pie parfaits but I think that was caused by my using frozen berries, though I did add extra flour (but I think not enough). I will try again with fresh berries when they are in season and re-review with stars. Served with Cool Whip instead of whipped cream (layered to make parfaits). Thanks for the recipe!
