    This is about as easy as it gets. It is a little spicy, but very good.

    Directions:

      In a medium sauce pan or in the microwave, melt the Velveeta cheese.
    2. 2
      In a food processor, process the can of tomatoes with green chilies.
    3. 3
      Stir the tomatoes into the cheese and heat till nice and warm.

      Serve with the nacho chips.

      I had guests over for cocktails and appetizers. This was a hit with everyone. I particularly loved the ease of preparation. I used tomatoes with "mild" green chilies because some people do not care for spicy foods. Thanks Darlene, your recipes are always a winner.

      This is the exact proportions for "Rotel Dip" that I've always used -- 1 lb (or half of a large brick) for every 1 can of undrained tomatoes. I put my tomatoes in the pan and whirled them with my stick blender, then cubed the cheese & melted over low heat. I also often add a dash of chili powder. This is a classic, never-fail dip! :)
