- 907.18-1360.77 g broiler, quartered
- 29.58 ml butter
- 473.18 ml dry white wine
- 1.23 ml tarragon leaf
- 0.25 ml thyme
- 1 small bay leaf
- 2.46 ml salt
- 1.23 ml pepper
- 2 egg yolks
- 29.58 ml Dijon mustard
- 14.79 ml sour cream
- 0.25 ml cayenne pepper
directions
- Heat butter in large frying pan.
- Add chicken and cook until well browned on both sides.
- Add wine, tarragon, thyme, bay leaf, salt and pepper.
- Bring to a boil.
- Cover and simmer for 45 minutes or until the meat is tender.
- Remove meat to a heated dish and keep warm.
- Discard bay leaf.
- Blend sauce with egg yolks.
- Add sour cream, mustard, and cayenne pepper.
- Heat stirring constantly, do not allow to boil.
- Pour over chicken.
