Moroccan Spiced Carrot Salad

"A cheap, healthy and easy salad. For a variation, try using curry powder in place of the cumin or adding a handful of raisins (soaked in hot water first)."

  • Mix the grated carrots with the orange juice and cumin.
  • Season with sugar, salt and pepper.
  • Drizzle with the olive oil and sprinkle over a couple tablespoons each of chopped coriander and parsley, if desired.

  1. Very simple and delicious! Love the combination of orange and cumin, I used parsley and instead of sugar used splenda. Just made a small amount for 2 as a side for a chicken leg supper. I will be making it again, thanks for posting!

  3. This recipe was DELICIOUS! I suggest refrigerating overnight to let the flavors meld. I added raisins and used half cumin/half curry and turned out great. Thanks!
     
  4. This carrot salad was good and quite easy to make. The cumin/coriander/parsley is a great mix of flavours. I could barely taste the orange flavouring, but that is probably because the oranges I was using weren't that flavourful to begin with. I think the curry/raisin combination would be great and I plan to try that soon.
     
  5. Delicious. I was intrigued by the use of cumin/curry in this (I went with the curry option). An unusual taste combination that went beautifully with lamb. I only wish I had made a double batch, it was so good.

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
