Mom's Exceptionally Hot Tabasco Sauce

- 8 ounces white vinegar
- 100 hot peppers (Tabasco)
directions
- Start with a glass canning jar filled halfway with white vinegar.
- Daily pick the bright orange Tabascos.
- Wear latex glove on squeezing hand!
- Pick up pepper by stem with other hand.
- Squeeze juice into jar, and drop in pepper.
- When jar is completely full, strain and decant into bottles with tiny spouts.
- I do not process as I use sterile jars, and it is a vinegar solution.
- Use with discretion.

Very neat recipe! You can use other types of peppers, not just Tabasco. I planted a Serano plant and it took off. In So. Indiana, I just picked my last crop this weekend. It's November 20! I've made this twice now and it turns out great! I added a pinch of Kosher salt and boiled my sauce after straining to thicken a bit. Tastes better than store bought.
