  • Cream shortening, margarine, and sugar.
  • Add egg yolks, one at a time, mixing well after each yolk.
  • Sift flour and soda together.
  • Add flour mixture alternately with buttermilk, starting and ending with flour.
  • Beat egg whites until stiff peaks form.
  • Fold egg whites into batter.
  • Fold coconut into batter.
  • Bake in 3 greased and floured pans for 25 to 30 minutes at 350 degrees.
  • Blend all frosting ingredients and frost cake when cooled.

I'm a single mother of 3, 1 girl and 2 boys, and my youngest graduated from high school in 2006. I also became a grandmother in July of 2006 which has been one of the greatest experiences of my life. I'm a music teacher and have taught for eighteen years in the same school district. I've raised my kids alone, which has been very difficult at times, yet it has been extremely rewarding. I like to cook and look at recipes on zaar...but since I have an empty nest most of the time,(my 2 youngest are in college) now I can get by real cheap on the grocery bill.....
