A spicy molasses cookie that tastes great with a glass of ice cold milk (or just dipped into a cup of hot coffee).
- 3⁄4 cup melted butter
- 1 cup sugar
- 1⁄4 cup molasses
- 1 egg
- 2 cups flour
- 3 teaspoons baking soda
- 1⁄2 teaspoon salt
- 1 teaspoon clove
- 1 teaspoon cinnamon
- 1⁄2 teaspoon ginger
- granulated sugar
- In mixing bowl, cream together butter, sugar, molasses and egg. Sift together flour, baking soda, spices and stir them into creamed mixture. Place in refrigerator for 1/2 to 3/4 of an hour to cool dough.
- Scoop dough up by the teaspoonful, roll into little balls, and roll balls in granulated sugar.
- Place them on greased baking sheets 2 inches apart to accommodate spreading.
- Bake at 350F for 12 minutes, or until cookies are flat. Allow to cool for 5 minutes before removing from sheets.
These are addictive little suckers! ;) My "normal" molasses cookies are soft and thicker .... these are a great change!! They go excellent with a nice fresh cup of coffee! Thanks for posting!!
With the first pan I made I forgot to chill the dough so the cookies really spread out when baked, so I chilled the dough and the remaining cookes baked out nicely. I did increased the cloves and the giner, thanks Ev, great cookies!..Kitten:)
