  • sprinkle cucumber with salt and set aside for 20 minutes.
  • place tofu in colander, put two plates on top of tofu and leave for 30 minutes to extract any moisture.
  • place miso, mirin, sugar, rice vinegar, and 2 tbsp water in a saucepan and stir over low heat for 1 minutes till sugar dissolves.
  • remove from heat and add egg yolk, whisking till glossy. cool slightly.
  • cut tofu into thick sticks and put on baking tray.
  • brush miso mixture over tofu and broil for 6 minutes each side till tofu is light golden.
  • to make dressing put ingredients together and whisk. drizzle over tofu and serve.
