Minty Yogurt Chicken

"Chicken is marinated in yogurt, mint, lemon and honey and then broiled or grilled. Serve with new potatoes and a tomato salad."

  • Slash the chicken flesh at regular intervals with a sharp knife and place in a bowl.
  • Mix together the honey, lemon juice, yogurt, salt and pepper and half the mint.
  • Spoon the marinade over the chicken and leave to marinate for 30 minutes.
  • Line the broiler pan with foil and cook the chicken under a medium-hot broiler until thoroughly cooked and golden brown, turning the chicken occasionally during cooking.
  • Sprinkle with the remaining mint and serve.

  1. This tasted great; I've never tried yogurt and mint together before with chicken, but definitely will again because the chicken turned out super soft and juicy. Served with more fresh mint and a pile of cous cous and we all loved it!
     
  2. My chicken came out nice and moist. The flavor was mild and pleasant. The mint did not overpower the flavor at all. I used a lowfat greek style yogurt and added just a pinch of curry powder. I allowed this to marinate for 2 hours before cooking. We were very pleased. Thanx!
