ingredients

• 2 large roasted sweet potatoes (about 2 cups)
• 2 eggs
• 3⁄4 cup sugar
• 1⁄2 cup brown sugar
• 1⁄2 cup butter
• 1 teaspoon vanilla
• 1⁄2 teaspoon cinnamon
• 1⁄2 teaspoon nutmeg

directions

1. Wrap potatoes in foil and roast for about a hour until fork tender.
2. Cool, peel, and mash potatoes with eggs, sugar, butter, vanilla, and spices. Beat with a hand mixer. Pour into pie shell.
3. Bake at 375 degrees for 45 minutes to 1 hour.
