Microwave Chocolate Banana Cake and Chocolate Sauce

"This was a saving grace for my husband who was craving dark chocolate one night. Low fat, and will definitely stop the cravings! Sauce can be drizzled for a topping or poured to make a pudding. My son also likes the sauce to make dairy-free milkshakes, and it's great to dip fruit in. Good hot or cold.   • CAKE

  • 354.88 ml all-purpose flour (gluten-free for allergies, such as rice flour or a mixture of soy and rice, corn etc)
  • 118.29-236.59 118.29-236.59 ml maple syrup (or to taste) or 118.29-236.59 ml golden syrup (or to taste)
  • 1 ripe banana
  • 44.37-73.94 ml baking cocoa
  • 4.92 ml baking soda
  • 236.59 236.59 ml orange juice (rice or soy milk for allergies) or 236.59 ml milk (rice or soy milk for allergies)
  • 78.78 ml oil
  • 4.92 4.92 ml almond flavoring or 4.92 ml peppermint extract
  • 9.85 ml chocolate flavoring
  • SAUCE

  • 177.44 ml unsweetened cocoa
  • sugar or syrup
  • 0.25 ml salt
  • 236.59 236.59 ml rice milk or 236.59 ml vanilla-flavored soymilk
  • allspice
  • cornstarch, to thicken

  • CAKE: Sift dry ingredients into a bowl (if using thick flour such as soy, it can work better if you sift twice) In another bowl mash banana and mix with liquid ingredients.
  • Combine and stir both together till well blended.
  • Pour into a lightly oiled microwave cake dish (I use a ring dish).
  • Cook high heat (use turntable) 6 to 8 minutes or until cake tests done.
  • SAUCE: In a bowl, mix a small amount of milk with cornstarch to create a paste.
  • In a saucepan, combine cocoa, sugar/syrup and salt.
  • Gradually add milk and cornstarch mix until smooth.
  • Cook, stirring constantly, until mixture boils.
  • Reduce heat to medium-high and cook for 5 minutes, stirring constantly until desired consistency.
  • Stir in vanilla etc.
  • If mixture needs to thicken, take some out of saucepan and mix with cornstarch.
  • For Vegan do not use milk [dairy].

Hi! I found this site looking for new recipes to cook for my family. I have two wonderful children, a girl and a boy. We all have food allergies, so I try to find recipes that I can adapt into wheat, dairy and sugar free. I love trying to do this, it is so much fun finding new things to cook and experimenting with food is becoming somewhat of an addiction for me, though my time is otherwise occupied! My daughter loves to help me cook so I also try to get ideas where she can help. She loves stirring cookie dough which is good because I love eating the cookies!!
