- 1 1⁄2 tablespoons olive oil
- 1⁄4 cup flour
- 1 (14 ounce) can chicken broth
- 1 1⁄2 tablespoons chili powder
- 1 teaspoon cumin
- 1 chipotle chile in adobo, one chile, not all, minced, plus
- 1 tablespoon adobo sauce, from can
- 3⁄4 cup water
directions
- Heat oil over medium. Add flour and cook, whisking until smooth. Add broth, chili powder, cumin, chipotle and adobo sauce, and water. Bring to a boil, whisking constantly. Reduce heat, and simmer until lightly thickened, about 10 minutes.
