Mexican Enchilada Sause

"This is a great authentic enchilada sauce that can be used with beef, chicken or cheese. Can easily be doubled or tripled and frozen"

• Serves: 6

ingredients

• 1 1⁄2 tablespoons olive oil
• 1⁄4 cup flour
• 1 (14 ounce) can chicken broth
• 1 1⁄2 tablespoons chili powder
• 1 teaspoon cumin
• 1 chipotle chile in adobo, one chile, not all, minced, plus
• 1 tablespoon adobo sauce, from can
• 3⁄4 cup water

directions

1. Heat oil over medium. Add flour and cook, whisking until smooth. Add broth, chili powder, cumin, chipotle and adobo sauce, and water. Bring to a boil, whisking constantly. Reduce heat, and simmer until lightly thickened, about 10 minutes.
