This recipe is from our retired pastor's wife Esther who is no longer with us. But when she was, the woman could cook!
- 3 egg whites
- 1 1⁄4 cups sugar
- peppermint extract or wintergreen extract
- food coloring (optional)
- Heat oven to 350 degrees F.
- Beat egg whites until frothy.
- Gradually add sugar and beat until stiff.
- Add flavoring. (Add coloring too if desired).
- Drop on cookie sheet.
- Put in oven.
- Turn off oven and leave overnight.
