- 3 -4 large onions
- 1 cup basmati rice
- 3 cups chicken broth
- 1 (19 ounce) can green lentils
- 1⁄8 cup olive oil
- 3⁄4 teaspoon allspice
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon cumin
directions
- Slice onions and add to skillet along with olive oil. Caramelize Onions. Remove 3/4 of your onions and continue to cook remaining onions until they start to get black and crispy. Remove remainder of onions and add rice to skillet. Cook rice for 3 minutes or until it is mostly translucent.
- Return onions to skillet along with the remaining ingredients. Simmer on low-medium heat for 20 mins or until rice is tender and the broth is absorbed.

This was great! I used a Trader Joe's packet of pre-cooked lentils instead of a can, and we were out of allspice. Also, I cooked the rice separately and did not blacken any of the onions. Other than that, I followed the directions, and the recipe turned out really well. The spicing is complicated and delicious. Thanks for posting!

This year I turn 25 and I am happier then ever. I decided January 2008 to take charge of my life and I've been working on it ever since. On July 24th 2008 I had gastric bypass surgery to help me control my weight and I have lost a total of 160lbs! My Mom, Dad and Aunt also had the surgery, all within 6 weeks and we've been a great support to each other. I am now working on a cook book that I am looking to publish to help others achieve there weight loss goals and to help out with bariatric weight loss! Wish me luck!
