- 453.59 g fresh raw tuna
- 118.29 ml couscous
- 118.29 ml boiling water
- 3 garlic cloves, minced
- 59.14 ml diced red bell pepper
- 59.14 ml diced yellow bell pepper
- 59.14 ml diced green bell pepper
- 118.29 ml chopped onion
- 118.29 ml chopped kalamata olive
- 29.58 ml drained capers
- 29.58 ml olive oil
- 2 eggs
- 118.29 ml Greek yogurt
- 4.92 ml baking powder
- 118.29 ml shredded parmesan cheese
- 2.46 ml salt
- 2.46 ml pepper

- 118.29 ml Greek yogurt
- 118.29 ml shredded parmesan cheese
- paprika
directions
- Pre-heat oven to 350F; Spray a 5x9-inch loaf pan with cooking spray and set aside.
- Place the couscous and minced garlic in a large bowl and pour the boiling water over; let sit until the water is absorbed.
- Chop the tuna into 1/2 inch dice and add to the couscous.
- Add all remaining loaf ingredients and mix well; hands work the best (I wear latex gloves).
- Pack the tuna mixture into the prepared loaf pan.
- For the topping, mix the yogurt and parmesan cheese together and spoon globs of it over the loaf; sprinkle with paprika.
- Bake in 350F oven for about 1 hour. Slice to serve.
