Good and easy. I especially liked the dressing. I can see making this and keeping it in the fridge for a week's worth of lunch.

  1. In a medium bowl, combine filling ingredients- set aside.
  2. In a small bowl combine dressing, mix well.
  3. Stir dressing into filling bowl.
  4. Spoon into pita halves.
  5. Serve immediately.
  6. Tip for brown bagging, place prepared mixture in a small container, keep chilled till ready to assemble, makes for a fresh tasting sandwich instead of the fast food route.
