- 2 (28 ounce) cans crushed tomatoes
- 2 (14 1/2 ounce) cans diced tomatoes with juice
- 1⁄4 cup extra virgin olive oil
- 2 garlic cloves, thinly sliced
- 1 teaspoon kosher salt
- fresh ground black pepper
- sugar (about 4 teaspoons)
- 1 sprig fresh basil
- 1⁄2 cup fresh basil leaf, torn into small pieces
directions
- In a 3-4 quart. pot, heat the oil and garlic together. When garlic becomes pale gold and fragrant add the tomatoes, salt, pepper, sugar and basil sprig. Stir well to combine and bring sauce to a boil, then reduce to a simmer. Simmer sauce, 20-30 minutes, stirring occasionally until sauce has thickened and is richly flavored. Remove from heat, check for seasoning and stir in the torn basil leaves.
