In our house this was summer food. My childhood summers were full of BBQ with this on the table. I hate to admit it but if there were leftovers the next day I would butter some bread and put the onion and cucumbers on and eat with a smile on my face. I invite you to try my sandwich provided there are any leftovers. Mama (Carmen Jackson) didn't measure, but they were always wonderful. I am approximating in the ingredients so you may have to adjust things to suit yourself.
- 1 large red onion, thinly sliced
- 1 English cucumber, thinly sliced
- 1⁄2 cup cider vinegar
- 1 tablespoon sugar
- salt and pepper
- ice cube
- Toss the thinly sliced onions and cucumbers with the cider vinegar, sugar, salt and pepper.
- Top with ice cubes and refrigerate.
Mmm, lots like my mama used to make, too :). And like mama, I served this up with a "mess" of beans with new potatoes, some sliced tomatoes, and a huge pone of cornbread. Yum! All rhapsodizing aside, I did have some difficulty with the ice--it froze my cukes so some of them were frozen when we tried to eat. I actually let the whole dish sit out for about an hour before serving and still had to throw out ice cubes! I've seen this done with water to almost cover, and I think I'll stick with that approach. I'd also be tempted to add a touch more vinegar, but then I'm a vinegar fanatic. The red onion is a nice touch--mom didn't use one when I was a kid. This is definitely a keeper; thanks for posting!
