Macedonian Sausages Filling

"Peter Minakis was inspiration for this recipe. Visit his blog; it will amaze you. This looks to be a spicy sausage. I would go low on the seasonings and build up; you can always add; you can't take away."

ingredients

• 10 lbs ground pork
• 2 1⁄2 lbs leeks, cleaned, chopped, green part too
• 1⁄8 cup red pepper
• 1⁄8 cup black pepper
• 1 teaspoon ground cumin
• 1⁄16 cup dried oregano
• 1⁄8 cup garlic powder
• 1⁄8 cup paprika

directions

1. Mix ground pork, leeks, red pepper, black pepper, cumin, oregano, garlic powder, and paprika together.
2. Stuff in casings.
