  • Preheat oven to 350°F.
  • Grease and line 12-inch baking pan.
  • Pour oil into bowl and add in carrots; mix well.
  • Add in eggs and sugar.
  • Beat until sugar is dissolved.
  • Add in dry sifted ingredients.
  • Toss raisins lightly in flour and fold into batter along with nuts, essence.
  • Blend thoroughly and bake in greased pan four 45 minutes or until toothpick inserted comes out clean.
  • Beat cream cheese and butter until fluffy add in sugar and vanilla.
  • Beat until light and fluffy.
