Low Fat Blue Cheese Dressing

"Blue cheese dressing lovers rejoice!! This dressing is easy on your waistline, but is creamy, thick, and satisfying. I usually make a double or triple batch for the week, as we eat a ton of salad. I live on the beautiful Oregon coast with my husband and my 3 year-old son. I love to cook and try out new recipes, especially using my in-laws as guinea pigs (they are both professional chefs).
