- Peel carrots and onions. Put in food processor until finely shredded. Add garlic. Saute in olive oil until soft. Cool.
- Put meat, eggs, milk, ketchup, salt and pepper in food processor and combine. Add cooled vegies and combine.
- Pat into 8 x 8 pan. Top with bacon. Cook in 400 degree oven for 45 minutes to 1 1/2 hours depending upon thickness. Meatloaf will shrink away from edges. If bacon hasn't cooked, convection or broil until done.
- Put on a rack under a pan and blot with paper towels to remove all possible fat. Let rest for 15 minutes.
- Serve plain, with ketchup, or A-1.
