Lori's Pulled Pork - Crockpot Style

  • chop onion into large chunks, using 2/3 of the onion on the bottom of the crock pot.
  • place roast into crock pot.
  • pour in beer or ale (again, I prefer Kilt Lifter).
  • Place remaining 1/3 onion on top of pork roast.
  • Cook on "LOW" for 8 hours -- if your crock pot runs hot, only cook initially for 6 or 7 hours.
  • Meanwhile:

  • chop large white onion into small pieces and place in medium sauce pan.
  • Add salt, brown sugar, pepper, paprika, white vinegar and tomato sauce.
  • Cook on low for 40 minutes or until onions are beginning to vanish. Cool and store for use on pork.
  • When pork has cooked for 6 to 8 hours (depending on crock pot cooking temps), remove pork.
  • Place onion in bowl, reserve for later.
  • Pour remaining liquid (which will have all the excess fat in it, away and dispose of 2/3 or the liquid -- retain 1/3 for later.
  • Using 2 forks, shred the pork.
  • Return the pork, the 1/3 liquid and onions to the pot and cook another 3 hours - ON LOW!
  • Add the saved sauce and turn to high for 35 minutes.
  • Serve on buns, rice or whatever you prefer!
