Lobster Macaroni & Cheese

"It's really just mac & cheese with lobster (I use lobster and shrimp sometimes), but people rave and consider it very "gourmet"."

  • Cook pasta and drain well.
  • Warm half and half (don't let it boil).
  • Melt 6 T. butter in a large pan, whisk in flour, cook for 2 minutes.
  • Whisk in warm milk & cook until smooth and thickened.
  • Remove from heat and stir in cheese, salt, nutmeg, white & black pepper, cayenne.
  • Taste & adjust seasonings. I often add in a splash of cognac at this point.
  • Stir in lobster and spoon mixture into gratin dish.
  • Melt 2 T butter, combine with panko, sprinkle on top.
  • Bake for 30 minutes in 375 oven until bubbly and macaroni is browned on top.

I live in the Phoenix area where the sun always shines. I love to cook and garden. I am a "gadget freak" and seem to buy every cooking tool that comes on the market. Currently, I'm playing with pressure cooker cuisine. If I could take a month off, I'd go to Italy and go to 3-4 different cooking schools. My favorite cookbook is "The New Professional Chef" by the Culinary Institute of America. The dog in the photo is Scout, who just happens to be the best dog in the world.
