  1. Heat vegetable oil in a large skillet over medium heat. Add hashbrowns, onions, peppers, tomatoes, and chopped cilantro. Cook for 10-15 minutes, turning frequently, until potatoes are golden brown and peppers are fork tender. Remove from heat and place in a casserole dish. Sprinkle with cheese and bacon bits. Garnish with fresh cilantro sprig.
