- 2 eggs
- 1 egg white
- 1⁄4 cup oil
- 1 cup unsweetened applesauce
- 1 (16 ounce) can pumpkin
- 1⁄2 cup sugar
- 1 cup all-purpose flour
- 2 cups white whole wheat flour
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 2 teaspoons pumpkin pie spice
- 1 teaspoon salt
- 8 ounces semi-sweet chocolate chips
- 1⁄4 cup oats
directions
- 1. Mix first 5 ingredients together,
- 2. separately, mix dry ingredients.
- 3. Blend the two mixutres, fold in chips.
- 4. generoously fill 24 greased(non stick cooking spray) or paper-lined muffin cups. Sprinkle oats on top.
- 4 Bake at 400 degrees F. for 16-20 minute.
