Whole wheat & fluffy?--Yes! I couldn't believe it either until I tried it. I'm not sure if it was because I milled my own wheat or not, but I'll be making this as my standard pancake recipe now.

  1. Beat egg until fluffy.
  2. Add remaining ingredients, mix only until smooth.
  3. Makes 8 (4 inch) pancakes.
  4. Really good and healthy!

I made this with whole wheat pastry flour yummy light fluffy cakes tastes better than with regular flour and I used 2 eggs since I have chickens.....

I am always a little uncertain about "wholewheat" sweets but as I need to improve my diet, I tried this for myself and my 9 yo old. Fabulous!! I omitted the sugar altogether, only used half the oil and Almond milk instead of buttermilk.. perfect with a lovely fructose-only fruit jam and, for my son, maple syrup!! A keeper!!

Amazing - they don't taste as "healthy" as you think. Just super light and perfect- like whole wheat hotcakes. Perfect quantity for 2 people. This is a keeper :)
