Light & Fluffy Coconut Macaroons

Simple recipe I found on the All Recipe sight, and since I LOVE anything coconut and usually have to buy my macaroons, this is a winner

  1. Preheat oven to 325.
  2. Grease a large cookie sheet.
  3. Whisk egg whites in bowl until frothy, then stir in almond extract.
  4. Mix together coconut, sugar, flour and salt.
  5. Gently stir egg mixture into coconut mixture to form a batter.
  6. Drop tablespoons of dough 1 1/2 inches apart onto prepared cookie sheet.
  7. Bake until edges start to brown, 18 to 20 minutes.
  8. Transfer to wire rack to cool, about 15 minutes.
