  • Preheat oven to 375°F Mix first five ingredients together, and drop by spponfuls onto a greased cookie sheet.
  • Sprinkle remaining 1/2 cup of coconut over cookies.
  • Bake for 15 minutes or until beginning to brown slightly. Let cool completely before removing from cookie sheet.

  1. I have never make an angel food cake before, so when I saw that the box mix had two separate packages that needed ingredients added to them that were not part of this recipe, I had my doubts. My first batch I baked on parchment paper and made the macaroons larger in size. The second batch I sprayed my cookie sheets with non-stick cooking spray, they almost burned ... I think I'll stick with the parchment. I scooped the remaining batter into a resealable plastic bag, snipping the corner, this made handling the batter a lot easier. I also make the rest of the macaroons smaller and cut the baking time down to 12 minutes. So after all these little things, I did end up with some deliciously lite macaroons! I kept wanting to melt some chocolate and dip half of them, but hello ... I'm making these for the "Lite and Low Recipes" event 2009 :) Great recipe! Thank you Chefella.
