- 6.16 ml unsalted butter
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 29.58 ml all-purpose flour
- 236.59 ml skim milk
- 368.54 g frozen chopped spinach, thawed and squeezed dry
- 14.79 ml fresh lemon juice
- 4.92 ml fresh lemon juice
- 3.69 ml lemon zest
- 29.58 ml bottled imitation bacon bits or 29.58 ml real bacon, pieces, plus
- 9.85 ml bottled imitation bacon bits or 9.85 ml real bacon, pieces
- 14.79 ml grated parmesan cheese
- 4.92 ml grated parmesan cheese
directions
- Melt butter in a heavy nonstick skillet over medium high heat.
- Sauté onion and garlic about 6 minutes until tender.
- Add flour and cook 2 minutes, stirring frequently.
- Gradually whisk in milk.
- Increase heat to high and whisk 2-3 minutes, or until mixture boils and begins to thicken.
- Reduce heat to low and stir in remaining ingredients, except cheese.
- Season with salt and pepper to taste.
- Cook until heated through.
- Serve sprinkled with Parmesan cheese.
