Libbie's Oatmeal Coconut Cookies

An old recipe from my MIL Libby.The directions for baking are not here as she used a wood stove. Watch them as I am guessing on the time and temperature. She made these a lot when Rudy was growing up. They are wonderful. She loves anything with coconut. Her Mother kept a jar of it just for her.

Ingredients Nutrition


  1. Mix ingredients together.
  2. Form into balls.
  3. Flatten balls.
  4. Bake at 350 degrees Fahrenheit for about 10 minutes.

These are a yummy, simple to make cookie. I used butter flavored crisco instead of the lard, added 1 tsp. coconut extract and 2 cups chocolate chips. Delicious, thanks for sharing!!

These were great and everyone loved them, and we were all shocked at how big they got! I got almost 3 dozen out of them and in about 24 hours they were all gone. I did add in about a cup of raisins (something in me just has to have raisins with oatmeal) and they baked perfect. Thanks again for posting!

Made these as part of a cookie tray destined for the office and they were a big hit. The cookies are big soft and chewy with a great balance between the coconut and oatmeal. My half batch yielded about 18 3-inch cookies. The larger cookie required about 12 minutes of baking. I replaced the lard with shortnening which is a better match than butter. Thanks for posting this great recipe.
