Lentil and Veggie Tostadas

- 414.03 ml water
- 177.44 ml dry lentils, rinsed and drained (yellow, green or red)
- 118.29 ml chopped onion
- 14.79-29.58 ml chopped fresh cilantro, plus more for garnish
- 2.46 ml salt
- 2 garlic cloves, minced
- 4.92 ml chili powder
- 1.23 ml turmeric
- 4 corn tortillas
- cooking spray
- 473.18 ml assorted chopped assorted fresh vegetables (such as broccoli, tomato, zucchini, and or or yellow summer squash)
- 177.44 ml shredded monterey jack cheese
directions
- In a medium saucepan stir together water, lentils, onion, cilantro, salt, garlic and spices.
- Bring to a boil, then reduce heat and simmer, covered, for 25-30 minutes until lentils are tender and most of the liquid is absorbed.
- Using a fork or a blender, depending on the texture you prefer, mash the cooked lentils.
- Meanwhile, spray the top side of 4 corn tortillas and put them under the broiler until they are toasted and puffy, only a minute or less. Turn them, spray the other side and toast it. Remove from oven.
- Spread the lentil mixture on the crunchy tortillas, top with vegetables and cheese. Return to baking sheet and broil 3-4 inches from the heat about 2 minutes or until the cheese melts.
- Serve immediately to hungry diners.

In my family, I am most famous (infamous) for several dishes:
My first original recipe: Conceived around age 7, for a cheese sandwich. Toasted English muffin, spread with butter, slice of American cheese, a good layer of Parmesan, top with other half of buttered muffin.
My most disasterous recipe: The Exploding Brownies. Otherwise great hershey's recipe for brownies involving an ingredient (baking powder) that I'd never used before. I somehow misread 1/4 teaspoon as a 1/4 cup. Brownie coated the ENTIRE oven.
My most requested recipe: Stollen at Christmas. I am required to make one for my mother ever since my sister gave me Christian Teubner's wonderful Christmas Baking book full of traditional German Christmas treats.
