Lentil and Pea Soup

- 236.59 ml lentils
- 1182.95 ml stock (i use miso paste with water)
- 118.29 ml chopped onion
- 118.29 ml chopped carrot
- 1 large garlic clove
- 236.59 ml peas (frozen is fine)
- 29.58 ml peppermint leaves or 29.58 ml mint leaves
- 14.79 ml fresh parsley leaves
- salt and pepper
directions
- - chop the onions and garlic and sweat off in a pan
- - then add the carrots and leave for a few minutes to slightly soften.
- - add the lentils and the stock and salt and pepper (to taste - i don't use too much at all as the miso paste stock i use is already salty).
- - leave this to simmer for a good 50 minutes, then add the peas and the herbs and more seasoning if needed. Leave to simmer for a further 20 minutes and blend just before serving.
- et voila!

I live in France with my French husband and my two wonderful dogs. I am English but have lived in France now for nearly a decade. I adore the french way of life overall but more so their true love of food and what it provides. Family gatherings, long sumptuous meals with varied complementing wines along side....the long conversations and the uttlery well behaved children amongst the family....who eat identically to the adults, what the grown ups eat, the children eat and they savour and enjoy the meals placed in front of them. Knowing their mothers and grandmothers have used old handed down recipes from generations before.
