Lemony Garlic Fingerling Potatoes

Makes a gorgeous presentation if you can find a medley of fingerlings (multi color).

• Cook Time: 45 mins

Ingredients:

Servings: 4

• 1 1/2 lbs fingerling potatoes, Halved
• 1/4 cup butter, melted
• 1/8 cup olive oil
• 2 teaspoons garlic, minced
• 1 teaspoon salt
• 1 lemon, juice of
• 1 tablespoon parmesan cheese, grated

Directions:

1. Preheat oven to 425°F.
2. Place potatoes in an 8" x 8" baking dish.
3. In a small bowl, combine melted butter, Olive oil, garlic, salt and lemon juice.
4. Pour over potatoes and stir to coat.
5. Sprinkle parmesean cheese over potatoes.
6. Bake, covered in a preheated oven for 30 minutes.
7. Uncover and bake an additional 10 minutes, or until golden brown.

These were perfect. I used 2 lbs fingerlings and the amount for the toppings was perfect. Sprinkled with oregano before baking for a bit of a greek twist. Thanks for posting!

So good! The only reason I didn't give it 5 stars is that it's a bit too much oil and butter for me. I reduced them by more than half, but it was still too much. But the flavor--wow! This is definitely worth making again and tweaking till I get the right amount of oil for my taste.
