This is my mother's recipe and I have always loved it. Quick and easy to prepare. When I don't have time to make my own lemon filling, I prefer Jello lemon pudding and pie filling (the kind you cook, NOT the instant).
- Mix first 7 ingredients together. Press half the mixture onto the bottom of an 8"x8" pan.
- Bake at 350° for 8 minutes.
- Prepare lemon filling. Pour over the mixture in the pan. Sprinkle with the rest of the crumbs.
- Return to oven and bake until top starts to brown a little, about 30 minutes. Watch closely so the squares do not burn.
