Serve hot with slices of fruit pies and tarts or on ice cream. Makes about 1 cup.
- 1 tablespoon cornstarch
- 6 tablespoons freshly-squeezed lemon juice (about)
- 3⁄4 cup cold water
- 1⁄4 cup sugar
- 1 lemon
- In a small bowl, add cornstarch. Mix a little lemon juice with a little water and add to cornstarch. Beat to a smooth paste.
- In a medium saucepan, heat remaining lemon juice and water. Add sugar, stirring constantly, until dissolved. Pour onto cornstarch paste, beating well until smooth.
- Return to saucepan over low heat, stirring constantly, until thickened and clear. Using a zester, add the peel of 1 lemon.
- Serve hot.
