  • Combine spices, press onto surface of roast.
  • Heat oil in electric skillet, brown beef, drain drippings.
  • Add 1 cup water. Bring to boil and simmer 2 hours, tightly covered.
  • Add onions, potatoes and carrots. Cover and cook 40 - 45 minutes or until tender.
  • Remove meat and carrots. Mix cornstarch and 1/2 teaspoon basil with a little water and return to skillet. Cook until thickend for gravy. May have to add a little more water if gravy is too thick.

I retired two years ago and thought I would have more time to devote to baking and cooking - not so much. The time just goes by so fast. My husband and I enjoy traveling, spending time with family and friends and especially spending time with our three little dogs and one cat.
