Lazy Mom's Lasagna

- 1 (14 ounce) jar marinara sauce (I always just use a jar of chunky spaghetti sauce, the chunky green papper one or the chunky garden )
- 1⁄2 lb sliced mozzarella cheese
- 1⁄2 cup grated parmesan cheese (I use the kind you sprinkle from a container)
- 2 tablespoons vegetable oil (I use olive oil)
- 1 small onion, minced
- 2 carrots, julienne style
- 2 small zucchini, julienne style
- 2 garlic cloves, minced
- 1 teaspoon basil
- 1 teaspoon oregano
- sal and pepper
- 1 (14 ounce) package frozen cheese ravioli, unthawed
directions
- Oven to 350 degrees.
- Heat oil in 12 inch skillet and saute' onion, carrot and zucchini with seasonings. About 3 minutes or until onion is translucent and veggies are tender.
- Transfer to a bowl and set aside until needed.
- Arrange the still frozen ravioli into one layer in a large skillet and cook over med. heat without stirring until heated through and beginning to brown on the bottom (gently lift with fork to check).
- Remove skillet from heat and carefully transfer ravioli to a single layer in a large casserole dish.
- Sprinkle with the onion and veggie mixture.
- Layer sauce evenly over ravioli and veggies.
- Arrange cheese slices over all and sprinkle the whole thing with parmesan cheese.
- Bake in middle of oven until cheese is melted and casserole is bubbly, about 10-15 minutes.
- Serve with a salad and garlic bread sticks.
- Pour the marinara or spaghetti sauce (whichever you are using) evenly over the ravioli and veggies.

I am married, have three children and two grandchildren. My youngest "oops" baby is just turning 17 and is going to be a senior in high school in the fall.. I love to cook and collect recipes. I get a lot of my good recipes from church potlucks. Since I am now retired and a stay at home mom, I have time to search the RecipeZaar site and try a lot of the recipes.
