- 9 -12 lasagna noodles (see step 1*)
- 24 ounces cottage cheese (see step 4*) or 24 ounces ricotta cheese (see step 4*)
- 2 eggs
- 1 cup shredded mozzarella cheese (see step 5*, 10*)
- 1 cup shredded parmesan cheese (see step 5*,10*)
- 1 (15 ounce) jar alfredo sauce
- 2 chicken breasts (optional, see step 6*)
- 1 onion (optional, see step 6*)
- 1 (12 ounce) bag frozen broccoli (optional, see step 6*)
- 1 (10 ounce) package frozen spinach (optional)
- 1 (14 ounce) can quartered artichoke hearts, drained (optional)
- 1 red pepper (optional, see step 6*)
- 1 (14 1/2 ounce) can diced tomatoes, drained (optional)

- Cook Lasagna noodles. *Cook 12 for a more "noodly" lasagna or only 9 for a less "noodly" one.
- Preheat oven to 375 degrees.
- Grease a 9x13 baking dish.
- Mix together cottage cheese or ricotta with the 2 eggs. *If you would like you can do a combination of ricotta and cottage cheese combined to 24 oz. Season as you would like (see step 12).
- Mix together 1/2 cup of mozzarella and 1/2 cup of Parmesan. *You can substitute the Parmesan for 1/2 cup of mozzarella if you would like.
- Take step 5 cheese mix and combine with Alfredo sauce and any of the (optional) ingredients you would like to use. *if using onion, red pepper, chicken or broccoli make sure it is cooked before adding to mixture. Season as you would like (see step 12).
- Spread half of Step 4 mixture on bottom of baking pan. Top with a layer of 3 noodles. Top that with half of Step 6 mixture.
- 9 NOODLE LASAGNA: Now layer on top the other half of Step 4 mixture. 12 NOODLE LASAGNA: Now layer on top 3 more noodles followed by the other half of Step 4 mixture layered on.
- Now top with 3 more noodles followed by a layer of the other half of Step 6 mixture and then followed by another layer of 3 noodles.
- Take the rest of the mozzarella and Parmesan and sprinkle on top. * You can once again substitute the Parmesan for mozzarella if you wish.
- Bake for 30 to 40 minutes or until cheese begins to bubble and slightly brown.
- NOTE: Great seasonings to use are onion powder, minced onion, garlic powder, minced garlic, basil, oregano, pizza seasoning, Italian seasoning, salt and pepper.
