These are a favourite in our family - I think the recipe was originally from a pamphlet picked up in the supermarket.

  1. Preheat oven to 180 degrees celsius.
  2. Line baking tray with baking paper.
  3. Combine all dry ingredients.
  4. Add melted butter and beaten egg.
  5. Mix into a firm dough.
  6. Divide into about 10 even sized pieces.
  7. Roll into balls and place on trays allowing room to spread.
  8. Flatten with palm of your hand.
  9. Bake for 20 minutes or until golden.
  10. Cool on trays for 5 minutes then cool on a wire tray.

These cookies tastes wonderful coconut and raisin gives enough sweetness and I like there is no sugar in recipe. Oats and corn flakes give nice crunch. Only downside was they don't hold the shape after baking and they crumbled apart. So I basically I end it up with granola but very tasty granola. :) The dough may need more eggs to make it moist and to bind all dry ingredients together.

Kate, these cookies are ABSOLUTELY AMAZING!!! They are crunchy, crispy, gooey and just plain yummy! :) I used semi-sweet chocolate, reduced the butter a bit and left out the coconut as Im allergic, but other than that, stuck to your recipe and it was perfect! The dough was easy to work with and not dry at all! The chocolate made it very moist while baking and added a nice sweetness. I only got nine cookies out of the full recipe, but thats just cause I made the first ones extra jumbo. ;) THANKS SO MUCH for sharing this gem of a recipe with us, Kate! Ill surely make it again! Made for RECIPE SWAP #8. This was a very dry cookie that we all found lacked something. It made up beautifully and was so quick and simple. I am giving it four stars becasue the taste was lovely, all it needs is something to make it moist though. Thanks for posting. Miss Pixie x x x :D
