  • In a large skillet, fry hash browns according to package directions, remove and set aside.
  • In a large bowl, beat eggs, add onion and green pepper.
  • Pour egg mixture into the same skillet; cook and stir until eggs are set, remove from heat.
  • Add hash browns and sausage; mix gently.
  • Place about 3/4 cup filling on each tortilla and top with about 1/4 cup of cheese.
  • Roll up and place on a greased baking sheet and bake at 350 degress for 15-20 minutes or until heated through.
  • Serve with salsa and sour cream.

I am not one who cooks 3 meals a day because to me, cooking is supposed to be an enjoyable pursuit and I do not cook out of obligation. However, when I'm in the mood, I do like to try out new recipes. I enjoy travelling, especially to places where I can find and explore old world architecture. I also like to browse through antique stores and flea markets, museums and galleries and I'm always looking for unique ways to redecorate my home. Due to my husband's career, our family moved from Washington State to Utah about a year ago.
