- 226.79 g fresh fettuccine
- 29.58 ml olive oil
- 14.79 ml garlic, minced
- 236.59 ml shallot, minced
- 6 cherry tomatoes, cut in half
- 236.59 ml vegetable stock
- 118.29 ml gorgonzola, crumbled
- 12 gulf shrimp
- 236.59 ml fresh spinach (stems picked)
- 118.29 ml toasted walnuts (skins rubbed off)
- 473.18 ml sliced mushrooms
directions
- Saute the garlic, shallots and mushrooms in olive oil over high heat until the mushrooms are soft. Add tomato, veggie stock, gorgonzola and shrimp, cover and cook until shrimp is done. Toss with cooked fettuccine, spinach and top with walnuts.
