Jam Swirl Muffins

  • Preheat oven to 375 degrees F.
  • Grease 10 cups of a 12-cup muffin pan or line with paper liners.
  • Combine wet ingredients (excluding jam) in medium-sized bowl.
  • Add flour, powder, cinnamon and salt; stir until just combined.
  • Add jam, mixing lightly and divide evenly among the prepared muffin cups, pouring water into the 2 unused cups.
  • Bake in centre of preheated oven for 20-25 minutes or until golden brown. Cool in pan.

  1. Great muffins! I made one batch for my husband, as written, and 1 batch for me with whole wheat flour and honey. Even the whole wheat muffins were light and moist. I used raspberry jam and omitted the cinnamon. (Not sure if raspberry and cinnamon mix well)

I am a busy single mom of 5 growing boys!! My children's ages are 21,18,14,12 and 10 1/2. In my spare time,when I have any, I try to walk 3 miles a day.I like to read Woman's World and inspirational books and if I didn't have 5 beautiful boys to care for, I would probably be doing missionary work. I live in the beautiful Okanagan Valley in British Columbia and I swear we must be living in Heaven on earth!!!I would love to travel if I had the resources and time with Brazil and South America being on the top of my list of places to see.
