Jalapeno Cornbread

- 1 1⁄2 cups cornmeal
- 1 tablespoon baking powder
- 1⁄2 teaspoon salt
- 1 cup fat free sour cream
- 1⁄2 cup vegetable oil
- 1 cup grated cheddar cheese
- 3 eggs
- 1 cup creamed corn
- 1⁄2 cup onion, diced
- 1⁄2 cup chopped jalapenos, canned or 1/2 cup fresh jalapeno
directions
- Preheat oven to 350.
- Grease an 8x8 baking dish.
- Mix the dry ingredients in a bowl.
- When thoroughly stirred, pour in wet ingredients.
- Mix until moistened.
- Put into greased pan.
- Spread.
- Bake about 25 minutes or until lightly browned.

Mixed reviews from here. My husband did not care for the taste or texture of this recipe. I thought the taste was ok but it was a little too oily for me.

Still in West Virginia but we've moved a few miles away, down to the county capitol. It's a compromise: bigger than our last town but smalelr than the "big city" of Cumberland MD, right up the road. Jobs are not that plentiful here so I am fortunate to be able to work at home (I'm a writer).
