This is good "basic" recipe, but it needs the addition of FENNEL Seed and RED PEPPER Flakes to make it "Italian Hot Sausage".

Ingredients Nutrition

  • 5 lbs pork butt (Coarse Ground)
  • 13 tablespoon salt
  • 13 tablespoon coriander, Ground
  • 14 tablespoon black pepper, Coarse Ground
  • 5 cloves garlic, pressed
  • 2 tablespoons paprika
  • 1 cup water, cold

Directions

  1. Add 2 tsp crushed red peppers for HOT sausage.
  2. Combine all ingredients, mix well and stuff into hog casing or make patties.
