- 1⁄4 lb butter
- 1⁄2 cup shortening
- 1 cup sugar
- 2 eggs
- 1⁄2 lemon, juice of
- 1⁄2 orange, juice of
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 3 cups flour
directions
- Cream together butter, shortening and sugar. Beat in eggs one at a time, beating well after each addition. Add lemon juice, orange juice and vanilla and beat well.
- Sift flour and baking powder together. Beat into wet ingredients until well mixed. Form into a log, wrap tightly with plastic wrap and refrigerate over night.
- Cut into 1/4" slices. Place onto ungreased baking sheet, 2" apart. Bake in preheated 350°F oven 12-15 minutes, until edges are just barely brown.

After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007.
